Beef & Potato Rissoles

Ingredients:

  • 4 or 5 Carrefour Big Saver Potatoes, coarsely mashed
  • Approx. 500g Carrefour Minced Beef
  • 2 Carrefour Big Saver Onions, chopped
  • 4 Carrefour Big Saver Eggs
  • 2 cups Any Flour
  • 3 cups Breadcrumbs (can be made using any stale bread, or can be store-bought)
  • Carrefour Vegetable Oil, for firstly pan-frying beef, and then deep-frying rissoles

 

Method:
Boil and coarsely mash potatoes - doesn't need to be creamy, as chunky is more delicious. Fry onion with minced beef until cooked, and season with salt and pepper. Combine potato and beef mix, and cool. Form into patty shapes, and roll in flour, then dip in beaten egg and breadcrumbs. Deep-fry until golden and crisp. Serve with a selection of Carrefour Bearnaise Sauce, Carrefour Mustard Mayonnaise, Carrefour Ketchup and Carrefour Chilli Sauce.

These simple and tasty rissoles are a great main meal teamed with a tossed salad or vegetables such as Carrefour White Mushrooms sauteed with a little garlic and ham, and steamed Carrefour Frozen Brussels Sprouts. I make them for my family once a week and they always are very welcomed by kids and husband alike.

I have had rissoles before.
In french, we call them "croquettes".
They are typically served as an entrée, dessert or side dish.

In Japanese cuisine, they are also called 'croquettes', and are typically served with finely shredded cabbage and drizzled with 'bulldog sauce' (a bit like worcestershire sauce mixed with ketchup). The shredded cabbage makes it a bit healthier and is surprisingly delicious. you should try! You can also make fabulous croquettes with more exotic fillings, such as mashed pumpkin with bacon and leeks, or mashed potato with flaked salmon and 'petit pois' (baby peas - you can get them from Carrefour in a jar - yummy!).
